Seitan with Mixed Sprouts
Ingredients (for 4):
75 g of mixed shoots
200 g of seitan washed by hand
200 g of green beans
Basmati rice 200 g
3 tablespoons extra virgin olive oil
Wash green beans and cook in salted water. Cut the zucchini into slices and let it boil with chopped shallot, oil and 1 tablespoon of water. Season with salt and pepper.
Add the green beans, cut into large pieces the seitan and pre-cooked basmati rice.
Sauté everything for 5 minutes over high heat.
Add the shoots and serve hot.
